Peperonata di patate
Ingredients:
1 red onion
5 garlic cloves
8 peppers
1/2 tin of chopped tomatoes
1/2kg potatoes
250ml vegetable stock
parsley (lots)
salt and pepper to taste
Method:
Cook potatoes in stock with chopped tomatoes.
Saute onion until soft, add chopped garlic and finally the peppers. Continue to cook for 10 minutes.
Add everything into one pan, cooking until potato is soft (at least 20 minutes).
