Ratatouille
Serves 4, although we made it for alot more!
4 Courgettes
2 Onions
1 Aubergine
2 Peppers
Chopped Tomatoes
2 Cloves of garlic
Method
1. Chop all the vegetables into bite sized chunks and saute in some oil.
2. Once cooked transfer everything to a big saucepan and add the chopped tomatoes and cook for a further 5-15minutes until all the veg is soft.
3. Season to taste with salt, pepper and chilli if you want!
4. Serve with basil (my favourite herb!)
