Leek & Potato Soup
Ingredients:
2-3 large leeks (cubed)
2 medium/large potatoes (cubed)
1 red onion (cubed)
Couple garlic cloves (roughly diced)
Paprika
Salt
Pepper
Single or Double Cream

Method:
Fry leeks, potatoes and onion in sunflower oil until soft, but not brown. Add salt, black pepper and paprika. The soup is somewhat red so use that as a guide for how much paprika. Pepper... you can never have too much pepper!
Then, add 2 veg stock with about 1 litre of boiling water. Then simmer for around 30-40 minutes, or until everything is really soft and ready to mash. Then mash with potato masher.
Add cream and heat up back on the hob. VoilĂ !
